Pancakes were such a traditional dish in the past that they had no separate columns in recipe books. That is, this dish was prepared everywhere, both on the tables of nobles and peasants.
In addition, the
dish had no specific recipe. In
addition, pancakes until the XX century did not have a proper name.
In some provinces they said alodia, in others aladia, in others oladiye.
Now fritters are also considered a traditional Slavic dish. However, they have a quite specific and competent recipe.
Ingredients for fritters:
- kefir – 500 ml;
- salt – ½ tsp;
- sugar – 1.5 tbsp;
- flour – 300 g;
- coconut shavings – 40 g;
- unrefined coconut oil – 2 tbsp;
- baking soda – ½ tbsp;
- lemon juice – tsp.
Preparation of fritters:
Pour salt and granulated sugar into a bowl with kefir, add coconut shavings and coconut oil. Sift the flour into the kefir in batches and knead the dough.
Note that the dough should slide off the spoon, not run off.
Pour baking soda into the dough, pour lemon juice over it.
Mix the ingredients in the dough one last time. This is one of the main rules of puffed fritters, you can not stir them anymore.
In a frying pan, heat vegetable oil, with a tablespoon we lay out portions of fritters. Fry the fritters on each side until golden.
You can omit the coconut oil and shavings from this recipe. These ingredients just add their own zest to the fritters.
