Belyashi is known to many people thanks to small stores in markets and train stations where they are prepared all the time. However, buying belyashi from such places can lead to unpleasant consequences. Unfortunately, it’s hard to know what exactly the belyashi are cooked from.
There can be poor quality meat, expired products and other bad nuances in stores. For this reason, it is worth carefully selecting purchased belyashi.

Ingredients of the dough for belyashi:
- kefir – 500 ml;
- salt – 1 tsp;
- sugar – 1 tbsp;
- baking soda – 1 tsp;
- vegetable oil – 1 tbsp;
- flour – 700 g.
Ingredients for the filling:
- minced meat – 500 g;
- onion – 300 g;
- salt – 1 tsp;
- ground black pepper – 13 tsp;
- cold water – 3 tbsp.
Preparation of belyashi:
Pour ½ part of flour into a bowl, pour warm kefir. Pour baking soda, sugar and salt into the kefir, wait for a reaction. Gradually and gently mix the kefir with the flour, knead the dough.
Pour vegetable oil into the dough, continue kneading. In the process, add more flour to the dough.
Knead the dough into an elastic and slightly sticky dough. Leave it in a bowl under a towel for 5-10 minutes.
To prepare the filling, dice the onion into small cubes and put them in the mince. Pour salt and ground black pepper into the mince, mix. Pour water into the mince to make the stuffing more juicy.
Divide the dough into bite-sized rolls

Sprinkle the table with flour, roll out the rolls with your hands to the state of round thick tortillas. Put the minced meat in the tortilla, seal the dough to the center.
Lightly press the belyash to make it flatter.
Heat vegetable oil in a frying pan and fry the patties on both sides until golden.
The minimum frying time for one side is 4 minutes.
As a result, you get a juicy and beautiful belyash. This type of pastry can replace the usual meat patties.
