In Germany and Austria – curd cakes are made with sand or puff pastry. Let’s bake our own cottage cheese cake with raisins and candied fruit.
Ingredients for cottage cheese cake:
- Curd – 420 g;
- Sour cream – 100 g;
- Eggs – 3 pcs;
- Sugar – 180 g;
- Salt – ½ tsp;
- Butter – 110 g;
- Vegetable oil – 2 tbsp;
- Vanilla sugar – 1 tbsp;
- Flour – 380 g;
- Baking powder – 20 g;
- Light raisins – 60 g;
- Dark raisins – 60 g;
- Candied fruit – 40 g.
Preparation of cottage cheese pie:
In a bowl with cottage cheese pour sour cream, pour salt and sugar, break eggs and thoroughly beat with an immersion blender.
Pour
melted butter and vegetable oil into the homogeneous mass.
Pour vanilla sugar into the mixture and stir. Pour in flour and baking powder, knead the dough, gather it into a lump.
Pour dark and light raisins and candied fruit into the dough, mix.
Place the dough in a baking dish lined with parchment and greased with vegetable oil.
Spread the dough evenly on the mold, bake at 180 degrees for 45-50 minutes.
