Quick sponge cake. It’s so good, you’ll eat it with the plate

It is believed that the first sponge cake appeared in Italy, where in the Middle Ages sweet pastries with added sugar, honey and spices became popular.

However, sponge dough was also known in other European countries. For example, in England, sponge cakes were part of sailors’ rations, as they did not spoil for a long time and satisfied hunger well.

Over time, the recipes for these pies became more varied. Different ingredients such as fruits, berries, nuts, as well as spices and savories began to be added to the dough. This allowed for many new flavors and combinations

.Let’s bake a simple sponge cake at home.

Ingredients for the pastry:

  • egg – 4 pcs;
  • sugar – 220 g;
  • salt – a pinch;
  • vanilla sugar – 1 tbsp;
  • milk – 200 ml;
  • vegetable oil – 200 ml;
  • flour – 400 g;
  • leavening agent – 15 g.

Ingredients for the filling:

  • cottage cheese – 400 g;
  • sugar – 100 g;
  • egg – 2 pcs;
  • starch – 2 tbsp.

Preparation of sponge cake:

Break eggs in a bowl, beat together with sugar, salt and vanilla sugar. Using a whisk, mix the egg mixture with milk and vegetable oil.

Gradually pour the flour into the milk and egg mixture, add the baking powder and knead into a liquid dough. Pour the dough into a baking dish lined with parchment.

For the filling, beat the eggs into the cottage cheese, pour sugar and starch, mix thoroughly. Spoon islands of filling onto the dough.

Bake the cake at 180 degrees for 35-40 minutes.

After cooking, you can sprinkle the pie with powdered sugar. You can also add berries to the pie before sending it to the oven.
