Olivier salad is one of the most popular and favorite salads in Russia. Its history goes back more than a hundred years, and during this time it has become an integral part of the holiday table.
Olivier salad, named after its creator Lucien Olivier, first appeared in Moscow in the early 20th century. Since then, its recipe has undergone many changes, but the basic ingredients have remained unchanged.
Today, “Olivier” salad is prepared in different ways, adding new ingredients or replacing traditional products with more affordable or favorite ones. But despite all the changes, this salad remains one of the most recognizable and delicious dishes of Russian cuisine.
Ingredients:
- Chicken breast – 1 kg;
- Potatoes – 1 kg;
- Pickles – 500 g;
- Carrots – 500 g;
- Peas – 200 g;
- Eggs – 10 pcs;
- Mayonnaise – 400 g;
- Mustard in grains – 70 g;
- Salt – ½ tsp.
Preparation of Olivier salad:
Grease potatoes and carrots with vegetable oil, sprinkle with salt and wrap separately in foil. Bake the potatoes and carrots for 50 minutes at 180 degrees C. Mince
the garlic, remove excess from the chicken breast. Grease the breast with vegetable oil, sprinkle with your favorite spices.
Leave the chicken to marinate under food foil. After 15 minutes put the breast on a
baking
tray covered with parchment, put garlic between the parts of the chicken.
Bake the breast at 180 degrees until ready. Boil hard-boiled eggs, cool and cut into small cubes. Cut
