Chocolate truffles are an unusual French dessert in the form of candy that is now common all over the world. However, chocolate truffles came about by accident. In 1920, in the kitchen of a French chef, an apprentice accidentally poured hot cream into a bowl of chopped chocolate. It seemed that the dessert was ruined. But, the apprentice decided to experiment and continue making his own dessert.
After trying it out, both the chef and his colleagues were surprised by the new flavor of the resulting candy. Since then, the candy has been improved and perfected. Now truffles have become an integral part of the French confectionery school.
Ingredients for chocolate truffles:
- apples – 500 g;
- 72% dark chocolate – 150 g;
- water – 50 ml.
Preparation of chocolate truffles:
Peel apples from the core and peel, cut into small pieces. Put the apples in a frying pan, pour in the water and simmer over medium heat with the lid on for 15 minutes.
Melt the chocolate in the microwave for 25 seconds in three batches.
Mix the chocolate with the apples in a blender and whisk until smooth.
Leave the resulting puree in the refrigerator until hardening.
Do not forget to cover the puree with foil in the contact.
Next, with gloves, form balls from the solidified puree, roll them in cocoa if desired.
When stewing apples, you can add aromatic alcohol or some essence for additional flavor.
The truffles can also be dipped in cocoa or coconut shavings.
