It is not uncommon to use crab sticks for appetizers and salads, because they are great for the holiday table. They have a light, tender and juicy flavor, as well as a pleasant texture. A few decades ago, we did not have the opportunity to try such a treat, because it was not exported outside of Japan. The
very first similarity of crab sticks in Japan was called surimi. It was a grinded minced fish meat. When the number of crabs dwindled, the cost of crab meat rose in price. An alternative was needed.
