In the late 19th century, the era of mayonnaise in salads began. It used to be served as a sauce to dishes and salads, but was not included in the recipe immediately. It is believed that Lucien Olivier was the first to start mixing mayonnaise with ingredients,
all because his customers often asked him to do just that in the restaurant. You can’t go against the customers’ wishes. This modernization on Lucien’s part led to a push in cooking! Salads began to be dressed immediately with mayonnaise, bringing them closer to the modern look.
Ingredients for the salad:
- chicken fillet – ½ piece;
- onion – pcs;
- carrot – pcs;
- cheese – 30-40 g;
- kiwi – ½ piece;
- pineapple – 2 slices;
- salt – a pinch;
- pepper – tsp;
- coriander – ½ tsp;
- mayonnaise – 2-3 tbsp;
- vegetable oil;
- walnuts.
Preparation of the salad:
A small onion is finely chopped, send it to a frying pan with oil. Fry until golden color.

Transfer to a bowl and add fried onions. Fill with one tablespoon of mayonnaise. Add spices to taste, we have – salt, pepper and coriander. Mix thoroughly so that the chicken absorbs the dressing. Grate
a small boiled carrot on a fine grater. Also grate cheese on a fine grater. Combine the ingredients, dress with one tablespoon of mayonnaise.
In a salad bowl on the bottom of the layer of chicken, smear with mayonnaise and cover with carrots and cheese.
Decorate with slices of kiwi and sliced pineapple. On top make a grid of mayonnaise.
Sprinkle with walnut crumbs.
Salad is ready, it is very simple, and looks delicious and appetizing.
The combination of kiwi and pineapple complement this treat perfectly.
