The preparation of flatbread is popular in the countries of the East, in Central Asia. The point is that originally in these countries they replaced bread with flatbread. It was more convenient for most nomadic peoples, as flatbread baked faster than a regular loaf.
Later flatbread became a traditional dish for the peoples of Central Asia and the East. For example, in desert regions flatbreads are baked in sand. Initially, this method seems outdated. But, tortillas cooked in sand have a unique taste and flavor.
In addition to the extreme ways of cooking tortillas, there are more typical for people. Let’s cook simple tortillas in a frying pan.
Ingredients for tortillas:
- kefir 2.5% – 500 ml;
- salt – tsp;
- baking soda – tsp;
- sugar – 2 tsp;
- flour – 800 g.
Preparation of tortillas:
Pour the baking soda into the warm kefir, mix and wait for the reaction of the ingredients. Pour into the kefir also salt and granulated sugar, mix until the grains of sand dissolve.
Sift flour into the kefir in batches, knead the dough first with a spoon, then with your hands. Do not forget the dough with flour, so orient yourself by the consistency.
You should get a soft, tender and slightly sticky dough

Leave the dough at room temperature for 10 minutes, then knead it and divide it into 4 equal parts.
Form koloboks

With a rolling pin, roll out each dough piece into a thin layer no more than mm thick. Grease the flatbread with vegetable oil and sprinkle with 4-5 spoons of sugar.
Roll the flatbread into a roll and then form a snail.
Pinch the edges of the dough, roll out the snail slightly to the diameter equal to the pan. Do
the same with the rest of the rolls
.
Heat vegetable oil in a skillet, fry the tortillas on both sides until golden.
Serve these sweet snail cakes warm.
They go well with milk or tea.
