Shanezhki with cottage cheese and cheese. Fluffy buns with tasty filling

The pre-revolutionary fairs of Arkhangelsk province knew traders called shanezhniki. The name “shanga” came to our dialect from the language of the northern people. This pastry is a brand of Arkhangelsk and Pomorie – the main symbol of their hospitality

Ingredients:

  • Flour 250-300 gr;
  • Milk 100
  • Sugar 200 gr
  • Pressed yeast 10 gr
  • Egg
  • Butter 40 gr
  • Salt 14 teaspoons
  • Ingredients for the filling:
  • Cottage cheese 250 gr
  • Hard cheese 100 gr
  • Eggs 2 pieces
  • A pinch of salt
  • Ingredients for the grease:
  • Egg one piece
  • Sour cream one tablespoon

Preparation:

Pour warm milk into a container, add yeast.

Add a

little sugar and stir with a whisk until the ingredients dissolve

. Add three tablespoons of flour, stir and cover with a plastic bag. Wait about half an hour for the preparation to rise a little.

In another bowl break a hen’s egg. Add salt and sugar. Stir until the components dissolve.

When the opara has risen, mix with the prepared pastry. Add flour and start kneading the dough. First with a spatula, and then with our hands on a table sprinkled with flour. When we knead the soft dough, it gradually absorbs the flour

. Slightly sticky dough hit the table so that it compacts faster. Knead for 10 minutes. Cover with a plastic bag and leave for 40 minutes.

Knead and roll into a ball. Leave again for 30 minutes under a plastic bag.

To make it convenient to work, grease the table with vegetable oil. Make a sausage from the dough and divide it into pieces. Roll dense balls. Lubricate a little vegetable oil and cover with a bag for another 10 minutes.

To prepare the filling, take 18% cottage cheese and crush the lumps with a fork. Grate hard cheese to it, salt and mix. Break one egg and crush the components with a fork to make the filling homogeneous. Divide into 10 parts and roll into balls.

Return to the dough, form a flatbread with your fingers and lightly pass with a rolling pin. The thickness of the flatbread is a little more than half a centimeter

. Transfer the pieces to a baking tray lined with parchment. Put the filling in the center. Spoon the filling almost to the edges. Leave to rise for 20 minutes.

For greasing, mix a tablespoon of sour cream and a hen’s egg. Grease

the products: first the dough protruding from the edges, and after – the filling. So the curd particles will not get on the dough, and the product will be neater.

Send to bake for 20 minutes at 190 degrees Celsius. When ready, brush the dough with butter to soften the shanezhki.
