Zucchini dishes have always been appreciated by the common people. The fact is that zucchini is one of the most widespread and budgetary vegetables. It is easy to grow, the harvest is usually abundant
. However, not everyone knows how best to cook zucchini and what to combine them with. Often the vegetable is simply baked or fried as a side dish to meat. But, you can even make tortillas from zucchini. To do this, you do not need to have special knowledge and be a chef. It is only worth a little effort and add potatoes.
Ingredients for zucchini tortillas:
- zucchini – 1 pc;
- potatoes – 1 pc;
- eggs – 3 pcs;
- milk – 300 ml;
- flour – 200 g;
- leavening agent – tsp;
- green onion – bundle;
- parsley;
- bacon – 100 g;
- salt – ½ tsp.
Preparation of zucchini cakes:
Remove the stalk from the zucchini, grate on a coarse grater. Peel potatoes from the skin, grate similarly, mix with zucchini mass.
In a separate bowl beat eggs,
salt and
pour ⅓ of the milk. Pour the flour into the mixture and knead the dough. Gradually pour the second part of the milk into the dough.
Put the vegetable mixture on a sieve, remove excess liquid. Pour the vegetable mixture into the dough and mix. Pour the rest of the milk into the batter. Finely
chop the green onions and parsley and add to the batter. Finely chop the bacon and fry in a frying pan with a minimum amount of oil.
If desired, you can also fry the onions in a frying pan and mix with the bacon.
Pour a ladleful of batter onto a clean, oiled skillet.
Fry the tortillas on each side until golden on medium heat.
It remains to wrap the bacon in the tortillas and serve.
This dish is reminiscent of vegetable pancakes, the batter is thin, with flecks of potato and zucchini.
