Golubtsy is a very controversial dish, shrouded in many myths. For example, one of the most popular myths is the origin of the word “dove” itself. It is believed that stuffed cabbage was so named because of its resemblance to pigeons. The roots of the dish allegedly go back to French cuisine. However, it is proven that stuffed cabbage first appeared in different cuisines of the world – from Polish to Chinese. From
the Dictionary of Dahl it can be understood that stuffed cabbage got its name from galushki. It means millet with meat, wrapped in a cabbage leaf.
Now stuffed
cabbage
is prepared
in
different ways. There is a way of cooking in a frying pan.
Ingredients for stuffed cabbage:
- Pork minced meat – 800 g;
- Cabbage for stuffing – 6o0 g;
- Onion – 2 pcs;
- Bulgur – 70 g;
- Garlic – 2 cloves;
- Paprika – 1 tsp;
- Italian herbs – 1 tsp;
- Black pepper – ½ tsp;
- Tomato paste – 1 tbsp;
- Lecho – 2 tbsp.
Preparation of stuffed cabbage:
Cut garlic into thin plates, cut the onion into feathers. In a frying pan fry the onion and garlic
. Shred 250 grams of cabbage, finely chop the onion. In a blender mix onion and cabbage and chop to a state of mush.
Put the cabbage mass to the minced meat, pour bulgur, paprika, Italian herbs, black pepper, mix thoroughly with your hands. Add tomato paste and lecho to the fried onion and garlic, pour 30 ml of water and mix.
Shred the rest of the cabbage and put it on the mixture of onion, tomato paste and lecho, but do not mix. Cover the cabbage with a lid and stew in a skillet.
Shape the stuffing into small oval stuffed cabbage.
Once the cabbage is soft, you can mix it with the onion, lecho and tomato mixture, stew for another 4 minutes under the lid.
Place the stuffed cabbage on the cabbage bed, pour boiling water over ½ of the stuffed cabbage

Cover the pan with a lid and braise for 35-40 minutes on medium heat.
Do not forget to turn the stuffed cabbage to the other side after 20 minutes of braising. You can chop cilantro into the pan after the main cooking.
To serve, first place the braised cabbage on a plate. Place the stuffed cabbage on the cabbage bed and serve.
