Stuffed peppers with a juicy filling. Every fall I cook only them: the whole family loves them

Not so widespread, but still in demand in our country is a sweet pepper. It is not difficult to guess that this vegetable did not grow on the territory of Europe.

Initially, all peppers were hot and grew in America. It was not until Columbus traveled to the mainland that the people of Europe learned about peppers. However, European peppers turned out not to be hot unlike American peppers

. Therefore, the new variety had to be experimented with. In particular, sweet peppers began to be stuffed with various fillings.

How to prepare stuffed peppers with minced meat and rice?

Ingredients for peppers with rice and minced meat:

  • Sweet peppers – 13 pcs;
  • Ground beef – 600 g;
  • Rice – 250 ml;
  • Onions – 2 pcs;
  • Carrots – 2 pcs;
  • Garlic – 2 cloves;
  • Dried basil – tsp;
  • Tomato paste – 3 tbsp;
  • Laurel leaf – 3 pcs;
  • Turmeric – 1/2 tsp;
  • Parsley – a bunch;
  • Salt – ½ tsp.

Preparation of stuffed peppers:

Dice the onions into small cubes, fry them lightly in a skillet. Boil rice until cooked, take twice as much water as the groats. Do not forget to salt the rice.

Chop carrots on a coarse grater, add to the lightly fried onions. Fry the vegetables on a fire slightly above medium. Put garlic cloves through a press to the vegetables.

Cook the rice for 6-7 minutes.

Add

dried basil and salt to the vegetable mixture, stir.

Put some of the fried vegetables in a plate.

Add tomato paste to the onions and carrots in the frying pan, pour in the water from the rice broth

Mix the paste with vegetables in the pan, put bay leaves.

In a plate with the set aside part of the vegetable mass add turmeric. Put the chopped parsley into the mince and then add the vegetable mixture with turmeric.

Mix rice with minced meat, salt to taste. Cut off the top of the peppers and remove the insides.

Put the stuffing

and rice into the peppers, do not tamp them down tightly.

Put the stuffed peppers standing in a deep pan, cover with the top part, which was cut off earlier.

Pour the gravy of vegetables and tomato paste over the peppers.

Fill

the whole pot with water, put on low heat.

Cook stuffed peppers for 45 minutes, cover the pot with a lid. After the set time, remove the lid and cook the peppers for another 5 minutes.

For the recipe, it is desirable to take medium-sized peppers, large ones can be taken 10 pieces. Before serving, don’t forget to pour the gravy over the peppers.
