Cookies are not a particularly ancient product. It appeared on people’s tables around the 7th century AD. The fact is that the peoples of the world did not have any strong need for a sugar product.
Cookies were invented in Persia, at the time of abundant sugar extraction. Probably, this dessert allowed the Persians to organize home rituals.
Cookies reached Europe in the XIV century. Monarchs of European countries loved cookies. Soon author’s recipes began to appear.
One of the successful cookie recipes is worth telling more about.
Ingredients of cookie dough:
- eggs – 2 pcs;
- sugar – 100 g;
- vegetable oil – 100 ml;
- flour – 300 g;
- leavening agent – 10 g;
- lemon peel;
- peaches in syrup – 80 g.
Ingredients for the cream:
- milk – 300 ml;
- egg yolk – pcs;
- vanilla sugar – 10 g;
- sugar – 3 tbsp.
- cornstarch – 2 tbsp.
Cookies preparation:
Pour milk into a saucepan, add egg yolk, cornstarch, vanilla sugar and granulated sugar. Over medium heat, cook the mixture until thickened, stirring constantly with a whisk.
Transfer the cream into a pastry bag.
Next, prepare the dough – in a separate bowl, mix the sugar and eggs until the grains of sand are dissolved. Pour into the egg mixture vegetable oil, stir.
Sift into the egg mixture in batches of flour, combined with baking powder. Add the lemon peel to the dough, knead the elastic dough with your hands.
Divide the dough into two equal parts. Put one of the parts in cellophane and leave it in the refrigerator for 20 minutes.
Roll out the other part into a round 5-6 mm thick. Using a circle cut out circles from the dough. Place the dough circles on a baking tray lined with parchment.
Chop peaches finely and put them in the middle of each circle.
Cover the peach filling with cream.
Grate a cold lump of dough on a grater, place the shavings on top of the cream.
Bake the cookies at 200 degrees in the oven for 20 minutes.
