Dried fruits were invented by mankind quite a long time ago. In ancient times, this method of storing fruits was the only proven and effective.
However, even after the emergence of new technologies for growing berries and fruits, drying fruits did not go away. The fact is that from dried fruits people learned to make a lot of desserts. They can no longer be withdrawn from the world cuisine.
Therefore, we should learn how to make desserts from dried fruits, too.
Ingredients for dessert from dried fruits:
- cottage cheese – 300 g;
- sour cream – 200 g;
- gelatin – 20 g;
- water – 120 g;
- apricots – 100 g;
- raisins – 100 g;
- prunes – 100 g;
- dates – 100 g;
- cherries – 100 g.
Preparation of dessert from dried fruits:
Pour gelatin with water and wait for it to swell. If the dried fruits are hard, soak them in boiling water beforehand. If the dried fruits are soft – you can just rinse and dry them.

Peel from the pips of cherries and dates, cut into small pieces. Similarly chop raisins.
Warm the swollen gelatin, so that it becomes liquid again. Combine cottage cheese and sour cream, optionally add honey and vanilla sugar. Beat the mixture with an immersion blender until homogeneous.
Pour the gelatin into the cottage cheese mixture, continue to beat with a mixer until all components are mixed together. Pour all the chopped dried fruits into the curd mixture, mix with a spatula.
Cover a mold with high sides with cling film, put the curd mixture with dried fruits in it. Put the dessert in the refrigerator until solidified for at least a couple of hours.
If there are extraneous odors in the refrigerator, it is better to cover the surface of the dessert with cling film.
By the way, instead of cottage cheese as a base you can take ryazhenka, kefir or Greek yogurt. This makes a great dessert without sugar.
