Vegetable cutlets are a tasty and healthy dish that can be a great choice for vegetarians, people fasting or those who prefer healthy food. They can be made from a variety of vegetables such as potatoes, carrots, zucchini, cauliflower and others.

Vegetable cutlets are a source of vitamins, minerals and fiber that are essential for maintaining health.

In addition, they can be customized to suit different dietary preferences and flavors.

Let’s prepare potato and zucchini vegetable cutlets together.

Ingredients:

  • Zucchini – 750 g;
  • Potatoes – 2 pcs;
  • Onion – 2 pieces;
  • Carrots – 2 pcs;
  • Sweet pepper – 1 pc;
  • Egg – 1 pc;
  • Parsley – a bundle;
  • Hard cheese – 70 g;
  • Flour – 4 tbsp;
  • Salt – ½ tsp.

Ingredients for the sauce:

  • Sour cream 20% – 2 tbsp;
  • Garlic – 2 cloves;
  • Parsley – a bundle.

Preparation of vegetable cutlets:

Grate zucchini and peeled potatoes on a coarse grater, mix in a bowl. Lay out in a bowl vegetable mixture should be in layers, each layer sprinkling with salt, and then mix.

Leave zucchini and potatoes for 15 minutes

In the meantime, heat vegetable oil in a frying pan, chop the onion finely, grate the carrots on a coarse grater

In a frying pan in a small amount of vegetable oil fry small cutlets of minced vegetables.
