A tart is a dessert that consists of a shortbread dough with filling and sprinkles. The history of tart goes back to antiquity. It is believed that its prototype was the first types of bread, which were a kind of baked porridge of water and flour.
They were prepared both for the everyday table and for festive feasts

However, grated pies in the modern sense appeared only in the XIX century thanks to European cuisine.
There are different ways to prepare this type of pie, with a wide choice of fillings
Let’s bake a classic grated pie with jam
Ingredients:
- Wheat flour – 400 g;
- Salt – a pinch;
- Baking powder – 9 g;
- Butter – 180 g;
- Eggs – 1 pc;
- Sugar – 100 g;
- Vanilla sugar – 4 g;
- Sour cream 25% – 2 tbsp;
- Strawberry jam.
Preparation of the tart:
Combine flour with salt and baking powder, put cold butter into the mixture. Using your hands, quickly rub the flour and butter into a creamy crumb. The
crumb should eventually clump when you squeeze your palm and disintegrate without impact. Pour the egg
mixture
into the bowl with the eggs, add the classic and vanilla sugar, add the sour cream and mix thoroughly.
Pour the egg mixture into the crumbs, knead the dough, gather it into a lump. Divide the dough into two parts – one larger than the other.
Put the larger part in the refrigerator for 1 hour, and the second part in the freezer for an hour. Don’t forget to put the dough in cellophane bags beforehand.
Roll out a large piece of dough on parchment, making an even square layer 6-7 mm thick. Smear the layer with jam or jam evenly. Grate
a small piece of dough on a coarse grater, sprinkle abundantly on the top of the pie. You can make islands of jam on the grated layer.
Bake the cake at 180 degrees for 20-25 minutes.
After cooking, sprinkle the pie with powdered sugar and let it cool. You can cut the tart immediately, so it will turn into small cakes.
