Tartlets have existed in the world history of cooking for quite a long time. They probably came to us, like many other dishes, from ancient Rome. The fact is that in Rome they liked to serve different appetizers in dough. But the dough was not edible back then.
Later, the Italians returned to the idea of tartlets
.
They began to bake edible baskets filled with vegetables, cheeses or meat.
Later, the English picked up the idea and also began to bake tartlets. In 1399 the dish was supposedly adopted by the French.
Let’s prepare homemade tartlets for a festive table.
Ingredients for tartlets:
- flour – 400 g;
- butter – 200 g;
- eggs – 2 pcs;
- milk – 2 tbsp;
- salt – 1 tsp;
- sugar – 1/2 tsp.
Preparation of tartlets:
Pour flour, salt and granulated sugar into a bowl, mix. Cut butter into small cubes, put soft butter in a bowl with flour and mix until we reach the state of creamy fine crumbs
. You can use a planetary mixer or a combine for this purpose.
Mix separately eggs and milk, pour the mixture into the creamy crumbs
.
Knead elastic and not sticky dough, leave it in the refrigerator for 30 minutes.
The dough can be used even after a week.
Place the dough on parchment, cover with a second sheet of parchment and roll out into a layer no thicker than 4 mm. Divide the dough into circles with a diameter slightly larger than the small muffin molds.
Place the dough circles into the molds, pressing them into the surface.
Do not press too hard, otherwise after baking the dough will crack when you try to pull it out of the mold.
Poke the bottom of each tartlet with a fork. Put the tartlets in the refrigerator for 30 minutes.
Then bake the tartlets at 180 degrees for 20-25 minutes.
Such tartlets can be stored for a week. They are suitable for serving pâtés, salads and other appetizers.
