Blini are considered a classic of Russian cuisine, along with karavay. Despite the fact that we bake them on the great holiday of Maslenitsa, pancakes appeared much earlier. It is believed that they gained fame when people began to actively bake thin tortillas in the shape of pancakes. We suggest cooking cabbage pancakes!
Ingredients for pancakes:
- Cabbage – 500 gr;
- Eggs – 2 pcs;
- Salt – 1 tsp;
- Sugar – 1 tsp;
- Dried garlic – ½ tsp;
- Milk – 500 ml;
- Flour – 200 gr;
- Yeast – 6 g;
- Vegetable oil;
- Butter – to grease the pancakes.
Preparation of pancakes:
Cut the cabbage into medium-sized pieces to fit into the bowl of the shredder, and put it in a container. If you don’t have a shredder, you can use an immersion blender.
Grind the cabbage to a purée, adding milk in small portions.
Put the puree in a bowl. Add salt, eggs and dried garlic.
Stir, pouring in the warm milk. It is important – the milk should not be hot and not cold, so that the yeast can ferment.
Add sifted flour to the obtained mass, stir. Add the dry quick-acting yeast and bring to a homogeneous mass. Cover the bowl with cling film. Put in a warm place for 30-40 minutes.
Heat a frying pan greased with vegetable oil on high heat. Once the oil is hot, reduce to low heat.
It is important that you grease the skillet before each pancake, since no oil was added to the batter.
Pour the batter into the middle of the skillet, making a small diameter pancake, otherwise our dense batter may tear when flipping.
Check if the pancake is browned on the bottom and flip. Cook the second side and place on a plate, smearing with melted butter.
