Tubes with cream is a dessert that consists of a crispy tube and a cream filling. It is believed that this treat originated in the USSR in times of shortages. Then confectioners came up with a simple and tasty dessert from available ingredients. The
first tubes with cream were made from waffles, which were baked in special molds. The cream for the tubes was prepared from butter, condensed milk and vanillin.
This dessert quickly became a popular and favorite treat of Soviet people. Today, straws with cream remain relevant, although the recipe is often changed. Let’s create in our kitchen a variation of pipes with cottage cheese cream.
Ingredients:
- Flour – 280 g;
- Baking powder – ½ tsp;
- Salt – a pinch;
- Vanilla sugar – 8 g;
- Butter – 100 g;
- Sour cream – 200 g;
- Egg yolk – pcs.
Ingredients for the filling:
- Walnuts – 150 g;
- Egg white – pcs;
- Sugar – 4 tbsp;
- Cottage cheese – 150 g;
- Egg yolk – pcs.
Preparation of tubes with cream:
Pour the flour, baking powder, salt and vanilla sugar into a bowl. Add the cold butter to the flour and knead it with your hands until it becomes a creamy crumb
. Add the sour cream and egg yolk to the crumb, knead the dough and gather
it
into a block. Leave the dough in cellophane for 15 minutes in the refrigerator.
For the filling, beat the egg white with a mixer with sugar until a glossy white mass. Chop walnuts and add them to the protein mass, mix.
Divide the dough into 4 parts, roll each part into a layer about 20 cm in diameter. Cut the dough like a pizza into triangles – 8 pieces per layer.
Put the walnut filling on the wide part of the triangles. Seal the filling inside the dough and roll up into a roll.
Lay out a part of the rolls on a baking tray lined with parchment.
For the second filling, simply mix cottage cheese with egg yolk. Similarly, divide the tortillas into triangles and place on the wider part of the triangle, wrap into rolls.

Bake for 15-20 minutes at 180 degrees.
After baking you can wrap the rolls in a cellophane bag with powdered sugar. In this way the rolls will be sugary, almost snow-white.
