Tender dumplings without eggs and butter. Dough like fluff without yeast

Varenyky with cottage cheese is one of the most popular and favorite dishes in Slavic cuisine. They occupy a special place in our cultural heritage as a symbol of homeliness and warmth. Vareniki are small dumpling-like dough products, usually stuffed with various fillings, among which cottage cheese takes one of the leading positions.

As a filling, cottage cheese is known for its delicate flavor and beneficial properties

It is rich in calcium, protein and vitamins.
Vareniki can be both sweet and savory, depending on preferences and recipe. For example, the sweet version is often sprinkled with sugar or served with berries and sour cream, while the salty ones can be supplemented with herbs or diluted with salt.

Ingredients for the dough:

  • Kefir 2,5 % – 250 ml;
  • Salt – 1/3 tsp;
  • Sugar – 1 tsp;
  • Soda – 1 tsp;
  • Flour – 320 g;
  • Butter – 30 g.

Ingredients for cottage cheese filling:

  • 5-9% cottage cheese – 600 g;
  • Egg – 1 pc;
  • Sugar – 2.5 tbsp;
  • Vanilla sugar – 10 g.

Ingredients for berry filling:

  • Blueberries / cherries – 300 g;
  • Sugar – 2 tbsp;
  • Starch – ½ tbsp.

Preparation of dumplings:

In a bowl with kefir pour sugar, baking soda and salt, mix. Partially sift 300 grams of flour into the kefir, knead with a spatula

knead

the dough on the table, beforehand spray the table with 20 grams of flour. Knead until the dough becomes elastic and soft, but slightly sticky.

Leave the dough under the tare for 15-20 minutes. For the curd filling, mix the curd with the egg, sugar and vanilla sugar.

Divide the dough into several pieces and roll out each piece into a 3-4 mm thick layer. Using a cup, divide the dough into circles and place the filling in each circle.

Seal the filling inside the dough and dust lightly with flour. Place the dumplings in the steamer so that they do not touch the water. It is important to grease the place where the dumplings will be placed with vegetable oil beforehand.

Cook the dumplings under the lid for 6 minutes after boiling

For the berry filling, mix sugar and starch, lay the berries on the dough circles

. Sprinkle the berries with a mixture of starch and sugar, seal inside the dough

.

Cooking time of berry dumplings is similar.
