Varenyky is a dish that is common in many countries around the world. Each country has its own peculiarities of preparation and filling of dumplings.
In Italy, dumplings are called “gnocchi” and are made of potato dough with cheese, spinach or other ingredients. Gnocchi are boiled and served with tomato sauce, cheese or butter.
In France, dumplings are known as “dumplings” and can be sweet or savory. Sweet dumplings are made with cherries, strawberries or other berries, and savory dumplings are made with meat, potatoes or cheese. Dumplings are boiled and served with sauces or gravy.
Let’s prepare a version of French strawberry dumplings
Ingredients for the dough:
- kefir 2,5% – 250 ml;
- egg yolk – pcs;
- sugar – 1 tsp;
- salt – ½ tsp;
- baking soda – 2 g;
- flour – 370 g.
Ingredients for the filling:
- strawberries;
- sugar – 200 g;
- cornstarch – 6 g.
Preparation of strawberry dumplings:
Cut strawberries in advance into small cubes. Put the yolk into the kefir, pour sugar and salt, stir.
Sift the soda into the flour, stir and pour in the kefir. Knead the dough first with a spatula, then with your hands. The
dough should become soft and slightly sticky. Cover it with cling film and leave it warm for 10 minutes.
Sift the cornstarch into the sugar for the filling. Roll out the dough into a layer no more than 5 mm thick. Divide the dough into small circles, you can use a glass instead of a mold.
Lightly roll out the obtained dough circles, put a teaspoon of sugar and strawberries in each one. Seal the berry and sugar inside the dough.

For cooking in a saucepan of boiling water, we place a sieve, so that it does not touch the water. Put the dumplings on the sieve, close the lid and steam for 5-6 minutes.

After cooking the dumplings can be smeared with butter.

You get sweet tender berry dumplings.
