Less than a century ago, pies were the main dinner in the house. They were prepared on holidays and on weekdays. Pies were a sign of wealth in the family. For example, only wealthy peasants could afford meat pies on holidays. Poor people,
as a
rule, were satisfied only with baked goods with vegetable filling. Pies
with fruits and berries were used as dessert
.
The most popular dessert pie was apple pie. Also in honor was a pie with currants and cherries.
Now the pies are treated not so reverently, but still with love. Let’s tell you how to cook delicious pies with cheese and sausage.
Ingredients of the dough for pies:
- Kefir – 400 ml;
- Yeast – tbsp;
- Sugar – tbsp;
- Flour – 600 g;
- Vegetable oil – 100 ml;
- Salt – a pinch.
Ingredients for stuffing:
- Boiled eggs – 4 pcs;
- Cheese – 30 g;
- Sausage – 50 g;
- Mayonnaise – tbsp;
- Salt – ½ tsp.
Pie preparation:
In a bowl with yeast and sugar, pour 200 ml of slightly warm kefir, mix the components. Pour a tablespoon of flour into the kefir, mix and cover with cling film. Leave the yeast and kefir together for 10 minutes.
Pour the rest of the kefir into the yeast kefir, salt and add 50 ml of vegetable oil. Sift some of the flour into the kefir and knead into a thick dough.
Pour the rest of the flour into the dough and knead into an elastic ball.
Grease the dough with vegetable oil and cover it with cellophane.
To prepare the filling, cut sausage and cheese into thin plates, peel boiled eggs. Cut sausage, cheese and eggs into small cubes. Fill the filling components with mayonnaise, mix and salt.
Grease the working surface with vegetable oil, knead the dough. Divide the dough into 12 equal parts, roll each part into a thick cake with your hands – the edges should be thinner than the middle.
Put the filling in the middle
of
each cake, seal it inside. Tuck the edges of the patties inside.
Heat vegetable oil in a frying pan, place the patties seam side down on the bottom. Fry the patties until golden on both sides.
As a result, we have patties made of very soft dough.
The filling for these patties can be anything – meat, cottage cheese, vegetable or fruit.
