Cakes now have large-scale production at various confectionery factories. Most of these factories are monopolistic, which makes it very difficult for ordinary confectioners. The
fact is that the factories produce cakes on a large scale. Just think of the shelves in stores with cakes. But, factory cakes are not as individual as confectionery author cakes. In addition, in author’s cakes more competently and reverently the master approaches the fillings and other products for the preparation of the dessert.
Author’s cakes are very expensive, and factory cakes are too sugary and sweet. It is worth learning how to create homemade delicious cakes in the kitchen.
Ingredients for cake batter:
- milk 360 ml;
- condensed milk – 540 g;
- flour – 540 g;
- salt – 3 pinches;
- leavening agent – 20 g.
Ingredients for the cream:
- milk 3.2% – 500 ml;
- sugar – 160 g;
- corn starch – 55 g;
- vanilla sugar – 10 g;
- butter – 150 g.
Cake preparation:
In a bowl with condensed milk pour the milk and stir, and then pour the flour sifted in advance. Pour salt and baking powder into the flour, knead a slightly thick biscuit dough.
Cover a baking tray with parchment, pour the dough on the bottom and level the surface. Bake the biscuits in the oven at 180 degrees until ready.
To prepare the cream, pour sugar, cornstarch and vanilla sugar into a saucepan with milk, stir and bring to a boil. When the custard thickens and starts to bubble, stir vigorously.
After the custard is removed from the heat, stir it continuously until we get rid of the bubbling. Cover the custard base with clingfilm and cool down.
Divide the biscuits into two equal parts, remove any uneven edges. We divide the biscuits across into thinner cakes.
Whip the soft cream together with the custard base for about 3 minutes with a mixer.
Lubricate each cake with cream, place the cakes on top of each other – assemble
the cake. Lubricate the sides of the cake and the top, cover the sides with shredded sponge cake. Leave the cake in the refrigerator for 2-3 hours.
You can decorate this cake with candies, berries.
It turns out to be a large cake for 3.5 kg. for the whole family.
