Mannik is commonly called a pie made of semolina. This is an ancient Slavic dish that has been baked since ancient times. When recipes for mannika came to our country is not known exactly.
However, this pie existed not only among the Slavs. Varieties of mannika are found in the Arab cuisine. There, this pie is called “Basbousa”. In Greece, mannika is called “Revani”.
Probably, Armenia should be considered the birthplace of mannika. Armenians have a recipe for “Shamali”, a pastry similar to mannikin
. Let’s tell you how to make delicious mannikin at home.
Ingredients for mannikin:
- kefir – 120 g;
- sour cream – 100 g;
- sugar – 130 g;
- salt – a pinch;
- honey – 70 g;
- vegetable oil – 120 g;
- eggs – 3 pcs;
- semolina – 200 g;
- flour – 180 g;
- baking soda – 1/4 tsp;
- leavening agent – tsp.
Preparation of semolina:
In a bowl combine sour cream, kefir, granulated sugar, salt and honey. Add eggs and vegetable oil to the mixture, mix thoroughly
. Pour the semolina into the mixture, knead the dough. Combine separately flour with baking powder and baking soda. In two approaches sift the flour into the dough, knead until homogeneous with a spatula.
Grease the baking mold with butter and sprinkle with flour.
You can leave the dough for 10-15 minutes to swell the semolina, but this action is not necessary.
Place the dough in the mold, level the surface

We recommend putting your favorite fruits and berries on top of the dough.
Bake the mannikin in the oven at 180 degrees for 35 minutes.
The cooking of the pie can be checked with a wooden skewer, there should be no dough left on it after piercing the baking. We advise you to take different berries and fruits for the recipe, the main thing is to remove the seeds.
