The lemon seems to be one of the oldest citrus species. It has very distinctive features that distinguish it from other citrus species. For example, lemon is sour and has a brightly colored rind. The lemon contains a large accumulation of vitamin C. However, it turns out that lemon is just a mixture of several citrus fruits. So, lemon plantations were bred by man.
Probably, the first lemon trees appeared in Asian countries.
Now lemon is used not only as an additive in tea. From citrus fruit, delicious unusual desserts are created.
Let’s prepare a lemon-berry cake.
Ingredients of sponge cake for lemon-berry cake:
- butter – 140 g;
- egg – pcs;
- sugar – 100 g;
- lemon zest;
- flour – 300 g;
- leavening agent – 10 g.
Ingredients for the cream:
- milk – 400 ml;
- yolks – 2 pcs;
- vanilla sugar – 10 g;
- cornstarch – 3 tbsp. tbsp;
- sugar – 4 tbsp;
- lemon juice – 20 ml;
- berries – 100 g;
- peach – pcs.
Preparation of lemon-berry cake:
In a deep bowl, combine butter with egg, sugar, lemon zest, baking powder and part of the flour. Knead an elastic dough with your hands, add the rest of the flour. Continue to knead a non-sticky
dough. ⅔ of the
dough into a 30 cm baking dish. Spread the dough thinly over the bottom and sides. From ⅓ of the dough make 3 rolls – small, medium and large. Roll out the rolls into thin sausages.
Make 3-4 circles from the sausages inside the dough mold.
Pour milk into a saucepan, pour yolks, pour vanilla and classic sugar, cornstarch, whisk. Over medium heat, cook the mixture until it thickens and bubbles form on the surface.
Pour lemon juice into the cream base and stir. Spread the cream into the spaces between the circles. Fill 2 cream rings with berries.
Cut thin plates of peach, fill the remaining rings with cream. Bake the cake at 180 degrees for 25 minutes.
For the cake you can use forest berries, as well as strawberries, blackberries, blueberries. After cooking, it is recommended to sprinkle the pastry with powdered sugar.
