Adzhika is a spicy seasoning widely used in Caucasian cuisine. It has a pasty consistency and is usually made from red or green peppers, tomatoes, garlic and various spices.
Adzhika can be served with meat and fish dishes, as well as used as an ingredient for other sauces and dressings

There are many recipes for ajika, which can vary depending on the region and your preferences.
Let’s prepare a delicious ajika for the winter.
Ingredients:
- Pepper – 2 kg;
- Tomato – 2 kg;
- Hot pepper – 2 pcs;
- Pepper – 3 pieces;
- Garlic – 10 cloves;
- Parsley – 70 g;
- Dry basil – 1 tsp;
- Hmeli Suneli – 1 tsp;
- Ground coriander – 1 tsp;
- Chaman – ¼ tsp;
- Salt – 2 tbsp;
- Sugar – 2 tbsp.
Preparation of ajika:
Cut tomatoes into 4 slices each, peel peppers from insides and seeds, split in half lengthwise. Chop peppers and tomatoes with an immersion blender into a homogeneous puree
. Mix tomato puree and peppers in a saucepan, cook over low heat.
Chop
the parsley and garlic finely and add it to the pepper and tomato mixture.
Pour the dried basil, hopli Suneli, coriander, Chaman, salt and sugar into the mixture. Stir the spices and cook the ajika for 20-25 minutes.
Put the ajika in jars, close and put away until cool. It makes a delicious winter appetizer for any dish.
