The most favorite cake in Italy. Simple recipe: you’ll want to make it every day

European cakes may differ from what is usually prepared in the CIS countries. Often cakes in Italy, Spain are pies with cream filling. This trend of cooking appeared quite a long time ago. Probably, the recipes refer to the time when many people did not have the opportunity to order real large cream cakes.

Now the choice of homemade cakes in Italians is huge. Among the large number of baked goods you can find lemon cakes, banana cakes, pineapple cakes and others. The important feature is considered specifically cream filling with the addition of mascarpone.

Let’s prepare an Italian lemon cake.

Ingredients for lemon cake batter:

  • egg – pcs;
  • sugar – 100 g;
  • vanilla sugar – 8 g;
  • lemon zest;
  • butter – 140 g;
  • flour – 300 g;
  • leavening agent – 10 g.

Ingredients for the cream:

  • milk – 400 ml;
  • egg yolks – 2 pcs;
  • sugar – 5 tbsp;
  • vanilla sugar – 8 g;
  • cornstarch – 3 tbsp;
  • mascarpone – 3 tbsp;
  • lemon juice – 30 ml;
  • peaches in syrup – 800 g.

Preparation of lemon cake:

In a bowl break an egg, pour vanilla and classic sugar, beat with a whisk until the grit dissolves. Grate lemon zest into the mixture, add butter, flour and baking powder

. Knead elastic and soft dough with your hands, divide it into two parts – a larger and a smaller one.

Distribute the larger dough over a 25 cm diameter mold, building the bottom and sides

For the filling, pour milk into a saucepan, add yolks, vanilla and classic sugar, stir.

Pour starch into the mixture, stir again and cook over medium heat until thickened, stirring constantly. Add the mascarpone to the cream base and mix thoroughly.

Pour the lemon juice into the cream, mix and spread on the bottom of the mold with dough.

On an even layer of cream put peaches in syrup.
