Teresitas is a Mexican dish. It consists of corn tortillas with various additives. The

tortillas are filled with beans, cheese, meat, vegetables and herbs. The dish is then pan-fried or baked in the oven. Teresitas are usually served with sauces and sour cream. This dish can be both a main course and an appetizer. Teresitas can also be a dessert if you make a rich, sweet custard for the tortillas. This dish has become popular not only in Mexico, but also in the United States. From the states, teresitas has migrated to Europe, where it is prepared in various small restaurants.

You can prepare teresitas on your own.

Ingredients:

  • milk – 800 ml;
  • cinnamon – 1 stick;
  • orange peel;
  • lemon zest;
  • sugar – 80 g;
  • egg yolks – 4 pcs;
  • vanilla essence – 1 tsp;
  • cornstarch – 4 tbsp;
  • puff pastry – 2 layers.

Preparation of teresitas:

Pour 400 ml of milk into a saucepan, heat it until warm and add cinnamon, lemon and orange zest and sugar. Bring the milk to the boil.

At this time, add the egg yolks, vanilla essence and cornstarch to the remaining 400 ml of milk and whisk until all lumps are removed. Sieve the hot milk into the starch mixture.

Pour the milk into a saucepan and simmer until thickened. Next, remove the cream from the heat, cover with cling film and leave to cool in the refrigerator.
