One of the most useful and tasty inventions of mankind is pies. And in this case, it is pies in the plural that are meant. The fact is that big pies appeared a little earlier than small ones.
However, a big pie was not always convenient in a large family. Traditionally, adult men sat down for the meal first. Then mothers and other older women. And only then children and teenagers. Accordingly, the last in line for the meal could simply not eat what was left. Therefore, pies have become a great way to solve this issue.
Let’s make pies at home with a filling of canned beans.
Ingredients of the dough for pirozhki:
- Boiling water – 250 ml;
- Flour – 160 ml;
- Milk – 250 ml;
- Sugar – tbsp;
- Salt – tsp;
- Yeast – 9 g;
- Butter – 100 g;
- Flour – 700 g;
- Vegetable oil – 3 tbsp.
Ingredients for stuffing:
- Canned beans – 300 g;
- Salt – ½ tsp;
- Green onion – bundle;
- Onions – pcs;
- Mushrooms – 150 g.
Preparation of patties:
Pour boiling water into a bowl with ⅓ of the flour and stir. Put the choux pastry aside until it cools down.
In a large bowl pour the milk, pour salt, granulated sugar and yeast. Stir the loose components, add the dough in boiling water.
Melt butter, pour into the dough and mix thoroughly. Gradually add the remaining two parts of flour to the dough.
Knead the flour into the dough with your hands for about 5 minutes. Pour the vegetable oil into the dough and knead again for a couple minutes. Get rid of the stickiness. Leave the dough in the heat for an hour under a cling film.
To prepare the filling, drain the liquid from the canned beans. Knead the beans with a fork until they are semi-mashed.
Shred small green onions into the bean puree, salt and add spices to taste. Dice the onion into small cubes
, fry the onion in a frying pan until golden, add it to the beans, try to separate it from the oil. Chop mushrooms finely, stew in a frying pan with the same oil as the onions
. Fry the mushrooms in the frying pan for 15 minutes, add them to the beans and mix everything thoroughly.
Oil the surface of the table, knead the dough on it

Divide the dough into small lumps. Create tortillas with a thick center and thin edges, put the filling on the surface.
Seal the beans and mushrooms inside the dough, turn the patties seam side down.
Pour vegetable oil into a thick-bottomed, high-sided skillet and heat over medium-high heat. Place two patties in the oil, fry, constantly moving from one side to the other.
Fry the patties until golden.
From this dough you can also make patties with jam. You get a pastry with a thin and crispy dough.
