The history of pirozhki goes back to ancient times and is closely connected with the development of culinary traditions of various peoples of the world. Pirozhki, as we all know, are small dough products with a variety of fillings. Depending on the time and place of their preparation, pies can have different shapes, sizes and composition. The

first mentions of pies date back to ancient civilizations such as Egypt and Mesopotamia. They prepared a dough made of flour and water, which was filled with meat, fish or vegetables. These products can be seen as the predecessors of modern pirozhki.

In the Middle Ages, pirozhki became popular in many European countries. In Russia, for example, pirozhki began to be actively cooked from the 11th century.

Now there are many different recipes for pirozhki. Let us tell you about one of the ways of preparing the dough.

Ingredients:

  • warm water – 300 ml;
  • salt – 1.5 tsp;
  • sugar – 1.5 tsp;
  • vegetable oil – 100 ml;
  • dry yeast – 1 tbsp;
  • flour – 1100 kg;
  • sour milk – 300 ml;
  • baking soda – tsp.

Preparation of patties:

For pirozhki mix a spoonful of salt, sugar, dry yeast and 100-200 grams of flour in a bowl with water, knead the opara. Put sour milk in a separate bowl, add baking soda, 200 grams of flour and mix.

Pour the rest of the salt and sugar into the mixture and knead the dough

Leave both mixtures for 15 minutes in the heat, and then combine.

Gradually pour the flour into the total mass, knead a soft elastic dough

Leave the dough to rest for 5-10 minutes, and then grease with vegetable oil, divide into small portions.

Then roll out the koloboks into small tortillas, where we put the filling as desired. Seal the filling inside the patties, placing them seam side down.

Dip the patties in hot vegetable oil and fry on both sides until golden.
