Pancakes are a native Slavic dish that appeared in the times of the pagans. Then pancakes were considered a symbol of the sun and were baked, as a rule, at the beginning of spring.
For pancakes there is a holiday Maslenitsa. However, with the advent of Christianity, this celebration of paganism lost its original meaning. Pancake Day was necessary for people to bring pancakes as a gift to the goddess Lada. So she blessed the Slavs for fertility in the coming summer.

This dish is served constantly in winter, summer and fall. Let’s tell about the recipe for cooking pancakes with cottage cheese filling.
Ingredients of the dough for pancakes:
- eggs – 3 pcs;
- salt – tsp;
- sugar – 1.5 tbsp;
- milk – 500 ml;
- flour – 250 g;
- boiling water – 150 ml;
- vegetable oil – 3 tbsp.
Ingredients for stuffing:
- cottage cheese – 400 g;
- egg – pcs;
- sugar – 90 g;
- cornstarch – tbsp. l;
- butter – 40 g.
Preparation of pancakes:
In a bowl break eggs, pour salt and granulated sugar, beat with a whisk. Pour 250 ml of milk into the egg mixture, mix. Pour the flour into the mixture, knead the pancake batter. Pour
the rest of the milk into the batter, add boiling water, vegetable oil and mix again.
Leave the batter to stand for 15 minutes, and then fry thin pancakes in a frying pan.
To prepare the filling, mix cottage cheese with egg, sugar, starch and melted butter.
Put the filling on each pancake, twist into tubes and divide in half.
Grease a baking mold with butter, lay the pancake tubes on the bottom. Grease the top of the pancakes with butter, cover with foil and bake at 180 degrees for half an hour.
You get soft tender pancakes with cottage cheese filling.
You can add raisins to the cottage cheese for flavor.
