Ingredients of the dough for pancakes with red fish:
- Flour – 150 g;
- Eggs – 2 pcs;
- Kefir – 500 ml;
- Milk – 100 ml;
- Vegetable oil – 4 tbsp;
- Sugar – 3 tsp;
- Salt – 1 tsp;
- Soda – 1/2 tsp.
Ingredients for stuffing:
- Ricotta cheese – 300 g;
- Lightly salted red fish – 200 g;
- Fresh cucumber – 1 pc;
- Dill – 1 tbsp;
- Salt – ½ tsp.
Preparation of pancakes with red fish:
In a bowl break eggs, pour salt and sugar, stir with a whisk. Sift flour into the egg mixture and pour in 250 ml of kefir, mix to a thick dough.
Pour the rest of the kefir into the dough, pour in baking soda and continue mixing. Pour vegetable oil and milk into the dough, mix and
leave the dough warm under a towel for 15-20 minutes. For the filling remove the seeds from the cucumber and cut it into small cubes
. Similarly to the cucumber cut the lightly salted fish, chop dill. Put the cucumber, fish and dill in a bowl with cheese, salt and mix.
