Marshmallows are one of the few sweets that are approved by nutritionists. The benefits of this dessert were known even in ancient times.

However, the ancient and modern marshmallows are very different from each other. Now the preparation of this dessert is greatly simplified and has a different recipe. It is worth giving an algorithm for cooking apple modern marshmallow.
Ingredients for apple marshmallow:
- Apples – 1 kg;
- Water – 180 ml;
- Agar-agar – 8 g;
- Sugar – 250 g;
- Citric acid – 2 g;
- Vanilla sugar – 10 g;
- Egg whites – 2 pcs.
Preparation of apple puree:
Clean the apples from the peel and seed pods, put them in a baking dish greased with butter. Pour 100 ml of water to the apples, bake at 180 degrees for half an hour in the oven.
After baking, transfer the apples to a deep container and turn into a puree with an immersion blender.
While the puree is cooling down, whip the whites to white foam.
Gradually add 150 grams of sugar and citric acid to the whites, beat with a mixer until white peaks. Then take the meringue to the refrigerator, and put 200 grams of mashed potatoes in a saucepan
. Pour water to the mashed potatoes, add agar-agar, the rest of the sugar and vanilla sugar. On medium heat, mix the ingredients and bring to a boil.
Boil the agar-agar puree for at least a couple minutes, stirring constantly with a whisk. Add the puree to the protein mixture and beat the ingredients with a mixer to stiff peaks.
Immediately transfer the mixture into a pastry bag with a star-shaped nozzle, place the marshmallows on food film.
Leave the marshmallows for 2 hours at room temperature.
The marshmallows taste like apple, slightly sour.
If desired, you can sprinkle it with a mixture of starch and powdered sugar.
