One of the most popular pies on our planet is considered to be the Ossetian Pie. It is sold frozen in any large grocery store and is usually available in bakeries. The
history of the Ossetian Pie dates back about 3,000 years

Originally, the pie was an unleavened flatbread for rituals. But, over time, cheese was added to the flatbread and made the national dish of the Ossetians.
Since then, Ossetian pies have been modernized and
made
more delicious. Now everyone can afford pies
, however, it is better to prepare it yourself.
Ingredients for an Ossetian pie:
- milk – 180 g;
- fresh yeast – 9 g;
- sugar – 1 tsp. sugar
- salt – 1/4 tsp;
- vegetable oil – 2 tbsp;
- flour – 300 g;
- potatoes – 300 g;
- cheese – 200 g.
Preparation of the Ossetian pie:
In a bowl with warm water pour sugar, add yeast and stir. To the yeast mixture pour a couple of spoonfuls of flour from the total amount and wait until the foam cap is formed.
After the yeast has entered the work, pour vegetable oil into it, salt and stir. Pour flour into the yeast in batches, knead the dough for 5-6 minutes.
Grease the dough and container with vegetable oil, leave it under a towel in a plate for 40 minutes. Knead the dough after insisting, divide it into two parts of 250 grams approximately.
We leave the dough under a food film for 15 minutes. At this time we prepare the filling – boil potatoes until ready and peel them.
Potatoes together with cheese pass through a meat grinder until homogeneous

Sprinkle the potato mixture with your favorite spices, for example, khmeli suneli. Don’t forget to chop some herbs into the stuffing.
Roll out two parts of the dough into thick flatbreads. From the stuffing form two balls, put them in the center of the tortillas.
Cover the tortillas with the dough as if we were bagging them.
Place the pies seam-side down, stretching them into flatter tortillas with the filling inside. Try to make sure the filling inside is evenly distributed.
Don’t forget to make a small hole in the middle of the pies.
Put the pies on a baking tray greased with vegetable oil. Bake the pies at 200 degrees for 25 minutes.
A couple of minutes before cooking it is worth smearing the pies with butter, so they will be browned.
The pies are flavored and hearty Ossetian pies.
