Medovik is a popular dessert that is considered a classic among cakes. The dish has a rich history and is an integral part of Russian culinary tradition. Its roots go back centuries, when honey played an important role in the diet and culture of Slavic peoples.

Some culinary experts believe that the first mention of honey cake is found in Old Slavic recipes, where honey was used in baked goods and confectionery. It appeared on festive tables, especially at weddings and other celebrations. Later, in the XIX century, with the spread of European cooking, honeydews gained new popularity and began to be classified as a dessert for noble families.
Ingredients for the dough:
- eggs – 3 pcs;
- salt – a pinch
- sugar – 150 g;
- honey – 200 g;
- flour – 350 g;
- baking soda – 15 g.
Ingredients for the cream:
- butter – 300 g;
- powdered sugar – 50 g;
- vanillin – a pinch;
- sour cream from 22% – 500;
- cherries – 200 g;
- banana – 2 pcs.
Preparation of honey cake:
Break eggs in a bowl, pour salt and sugar, add honey and mix thoroughly.
Put the bowl with egg mixture
in
a pan with water and heat it up to 60 degrees, stirring constantly. At this temperature pour the flour and
baking
soda into the egg mixture, stir. With
a spatula, spread the batter in a circle on the baking parchment. The layers should be thin. Bake the cakes at 160 degrees for 7 minutes, and then cut out even circles with a pastry ring.
Mix the cherries with sugar, separately beat soft butter with powdered sugar with a mixer

Pour vanillin into the cream, add a spoonful of sour cream, continue to whisk.
Banana cut into thin plates. Lubricate the cakes with the juice from the cherries, put on each cream. Alternate layers of cakes with cream, lay out alternately banana or cherry.
Leave the cake under the food film for 1 hour in the refrigerator, and then remove the film and decorate with the rest of the cream.
