Varenyky is a traditional Slavic dish that occupies a special place in the gastronomic culture of many countries, including Ukraine, Russia, Poland and Belarus. These small hemispheres of dough filled with a variety of fillings are characterized by a delicate texture and can be either sweet or savory. Vareniki personify a homemade treat, family traditions and coziness, causing nostalgia for many who enjoyed this delicacy since childhood.

Cooking varenyky is a process that seems both simple and multi-step at the same time.

Historically, dumplings were cooked in every home, and the recipe was passed down from generation to generation. Let’s tell you how to cook dumplings from the right dough.

Ingredients for the dough:

  • Flour – 800 g;
  • Salt – 1 tsp;
  • Vegetable oil – 2 tbsp;
  • Eggs – 2 pcs;
  • Boiling water – 400 ml.

Ingredients for potato stuffing:

  • Potatoes – 1,5 kg;
  • Butter – 30 g;
  • Salt – ½ tbsp;
  • Ground black pepper – ½ tsp;
  • Onions – 3 pcs.

Ingredients for cottage cheese filling:

  • 9-5% cottage cheese – 350 g;
  • Egg yolk – 1 pc;
  • Vanilla sugar – 10 g;
  • Sugar – 2,5 tbsp.

Preparation of dumplings:

For potato stuffing boil peeled potatoes until ready, drain and knead to a mashed state.

Add butter, salt and black pepper to the mashed potatoes, stir. Chop

onions finely, fry in a frying pan in vegetable oil until golden.

For the cottage cheese filling, combine cottage cheese with yolks, vanilla and regular sugar in a blender, lightly chop

For the dough, sift flour into a deep bowl, make a depression in the middle.

Break eggs into the depression, pour in vegetable oil and salt, stir. Pour boiling water into the mixture, knead the dough until it is fully set.

Gather the dough into a lump and beat

the table for 5-7 minutes. Then remove the dough in cellophane and leave it for 10 minutes.

Then knead the dough again on a table dusted with flour. Divide the dough into 3 equal parts, roll each part into a layer 2-3 mm thick.

Divide the dough into small circles using a special mold or a glass. Put a teaspoon of filling in each circle and seal it inside the dough.

For cooking, pour 3 liters of water per 1 kg of dumplings into a pot.

When boiling, the water should be salted and added to it dumplings. After boiling dumplings cook them for about 4-5 minutes.
