Every housewife has her most successful and favorite recipe for sauerkraut. I share mine and want to note separately that I sauerkraut on the growing moon on any woman’s day – Wednesday, Friday or Saturday. This is how my mom sauerkraut, but my grandmother sauerkraut on any week that has the letter “p” in it. In other words, you should not do cabbage on Monday only.
To make it you will need ingredients like these:
- cabbage,1 kg;
- carrots, 1 pc;
- boiled water, 1 liter;
- salt, 1 tbsp.
Cooking process
I take only 1 carrot for every 1 kg of cabbage, this ratio is considered the most ideal. If you took 2 kg of cabbage, then take 2 medium carrots. Cabbage
thinly shredded, carrots rub on a coarse grater
. Mix cabbage, carrots, dill seeds to taste.
Lay, but do not tamp the cabbage in jars or a large container.
For the marinade mix boiled water with salt and pour cabbage
. Leave indoors for 5 – 6 days and every day poke to get out bitterness along with carbon dioxide.
Spread the cabbage in jars, trambling
.
In each jar pour 2 tbsp of sugar and pour brine
. Put cabbage in the cellar or in the refrigerator for a couple of days.
Such cabbage is very suitable for stewing and as a filling for pies and patties, dumplings.
