Zucchini is an annual herbaceous plant from the pumpkin family. They have oblong fruits that can be of different colors depending on the variety: green, yellow or white.

Zucchini were brought to Europe in the XVI century and quickly spread throughout the continent. In Russia zucchini became popular in the XIX century.
Initially zucchini were grown as an ornamental plant, but over time people appreciated their flavor and began to use them as food. Zucchini contain many vitamins and minerals, as well as fiber, which helps digestion. It
is best to consume zucchini for breakfast, for example, to make a spread.
Ingredients:
- zucchini – 2 pcs;
- carrots – 1 pc;
- onion – 1 pc;
- vegetable oil – 50 ml;
- salt – a pinch;
- garlic – 2 cloves;
- melted cottage cheese – 2 pieces;
- dill – a bunch.
Preparation of zucchini spread:
Finely diced onion, fry in a frying pan until golden. Grate carrots on a fine grater, put them to the onion.
Cut zucchini into small pieces and send to the frying pan with onions and carrots, salt. Stew zucchini with the rest of the vegetables until soft under a lid.
At this time chop dill, cut garlic into plates. Put in a separate container stewed zucchini, dill and garlic.
Add to the mixture melted cottage cheese and whip with an immersion blender until homogeneous.
Leave the spread in the refrigerator for 30 minutes and then serve.
It will be tastier to make the spread on slightly dried or toasted bread.
