Little is known about the exact time of the appearance of pirozhki in the cookery of Slavic peoples. This is surprising, since it is the CIS countries that are widely known for this type of pastry. The
first mention of pies in historical summaries dates back to the XII century. Then the chronicler was able to describe the meal of Alexander Nevsky, which was the starting point of the appearance of pies on the tables of the Slavic nobility.
Most likely, pies were not only a dish for princes and kings

They were eagerly eaten by peasants.
It is worth telling about the recipe for cooking Lenten pies.
Ingredients of the custard base for Lenten pies:
- water – 150 ml;
- dry yeast – 5 g;
- flour – 45 g;
- vegetable oil – 30 g;
- salt – ½ tsp;
- sugar – ½ tsp;
- boiling water – 150 ml.

- potatoes – 800 g;;
- salt;
- onion – 3 pcs;
- carrots – pcs.
Preparation of Lenten pies:
In warm water (36-38 degrees) dissolve dry yeast. In a separate bowl combine flour with vegetable oil, salt and sugar.
Pour boiling water into the flour mixture, stir. Pour to the boiling water, mix and leave to cool to warm. Then gradually introduce the flour into the mixture, knead a soft and slightly sticky homogeneous dough.
Leave the dough under cellophane for 40 minutes in the heat.
At this time boil the peeled potatoes in salted water until ready. Cut onions into small cubes, fry in vegetable oil until soft.
Grate carrots on a coarse grater, put them with onions

Fry vegetables for a couple of minutes, mix with boiled potatoes.
Add herbs to the vegetables, knead everything to a mashed state.
Dough is divided into small lumps of 50 grams each
