What is the difference between large pies and small pies? For many, the answer is obvious – a large pie is cooked whole, and small pies are individualized for everyone. But, why was it necessary to divide pies into whole and portioned? The
fact is that in ancient times the Slavs had a dilemma. According to customs, the first to the meal were men, then women, and then children. Accordingly, children could not always eat after adults.
Women came up with a way out of the situation – portioned individual pies.
However, now it is not always desirable to cook each pie separately. And there is no need for this. Therefore, let’s make a large cherry pie with cottage cheese.
Ingredients of the dough for cherry pie:
- eggs – 2 pcs;
- sugar – 100 g;
- vegetable oil – 125 ml;
- milk – 125 ml;
- flour – 200 g;
- cocoa powder – 25 g;
- leavening agent – 1 tsp.
Ingredients for the filling:
- egg – pcs;
- sugar – 50 g;
- vanilla sugar – 10 g;
- cottage cheese – 200 g;
- cherries – 250 g.
Preparation of cherry pie:
Beat the eggs with sugar using a mixer for about a couple of minutes. Then pour into the egg mixture vegetable oil and milk, continue to beat the components.
Sift into the mixture of flour and baking powder in batches, knead the dough
.
Add cocoa powder to the dough, continue kneading until the products are combined into a thick dough.
Place ⅔ of the dough into the baking dish, spread an even layer on the surface.
For the filling, with an immersion blender, beat the cottage cheese with the egg, vanilla and regular sugar until smooth. Spread
the cottage cheese filling over the dough in the baking dish. Place seedless cherries on top of the curd in an even layer.
Pour the rest of the dough into a pastry bag and gently spread over the berry layer. Using a skewer, lightly spread the remaining dough over the entire surface of the pie.
Bake the pie at 180 degrees for 35-40 minutes.
It turns out in the end an excellent dessert cake with cherries and cottage cheese. This cake can be decorated with glaze or custard, then it will turn out to be a cake.
