Children are told about the beneficial properties of carrots from childhood. Carrots are a source of many useful substances that help the body to function properly. Among other things, one of the important advantages of carrots is that they improve eyesight.
With all the positive properties of carrots, this vegetable gets boring if consumed raw. In soups and second dishes, carrots are not particularly noticeable, although they give their flavor notes.
To keep carrots from your vegetable garden longer and use them in the home, it is better to make preparations in jars

Ingredients for carrot preparations:
- carrots – 3 kg;
- salt – 3 tbsp;
- vinegar 9% – tbsp. per jar 0.5 liters.
Preparation of carrot preparation:
Clean carrots and remove black dots, stalks. Sterilize in advance jars and lids.
On a coarse grater or through a meat grinder chop the peeled carrots. Mix the carrot mass with salt, mix thoroughly with your hands.
Put the salted carrot mass in jars, tamp down to the neck. Pour a spoonful of vinegar into each jar, cover with lids.
Transfer the jars to a saucepan, the bottom is covered in advance with a towel. Fill the pot with water up to the shoulders and send it to medium heat until boiling
. Then cook the jars with carrots for half an hour under a lid.
Take the jars out of the pot, cover and turn them upside down.
Leave the jars under a towel until they cool down. This way you can easily make a quick stir-fry for winter dishes, soups and salads
