Many people associate pumpkin pies with fall. The fact is that this pie becomes especially relevant in the fall period. Then all vegetables, including pumpkin, ripen.
In the CIS countries, pumpkin pies are not as relevant as in Europe and America. More often pies are baked, for example, with apples. However, it is worth trying to cook pumpkin pie, for it is a special unusual kind of baking.

Ingredients for pumpkin pie:
- Pumpkin – 300 g;
- Eggs – 2 pcs;
- Sugar – 150 g;
- Flour – 220 g;
- Leavening agent – 15 g;
- Salt – a pinch;
- Vegetable oil – 120 ml.
Ingredients for syrup:
- Sugar – 150 g;
- Lemon – 1 pc;
- Water – 100 ml.
Preparation of pumpkin pie:
Clean the pumpkin from the seeds and the outer shell. Grate the pumpkin pulp on small grater teeth.
Grate the lemon, cut off its zest. Break eggs into a bowl,
add
sugar, beat the ingredients with a mixer until smooth and fluffy
. Add salt and vegetable oil, lemon zest and pumpkin pulp to the egg mixture.
Stir the ingredients, sift flour combined with baking powder into the mixture. Mix
the dough, preheat the oven to 180 degrees Celsius
.
Grease a baking dish (diameter 24 cm) with vegetable oil, pour the dough into it.
Level the dough on the surface, knock the bottom of the mold on the table. Bake the cake for 40 minutes in the oven.
To prepare the syrup, squeeze the juice of the lemon into a saucepan. Mix the lemon juice with sugar and water and bring to a boil over medium heat. Once boiling, cook the syrup for 30 seconds and pour it over the surface of the pie.
You can make holes in the pie to allow the syrup to soak in faster.
Leave the pie to soak in the syrup for 20 minutes. You get a sweet vegetable pumpkin pie.
