Zucchini is a versatile vegetable from which you can prepare many different dishes.
For example, in Europe, you can find a stew of zucchini with vegetables. This is a light and healthy dish that can be a great option for dinner. Zucchini is stewed together with other vegetables such as carrots, onions, tomatoes and bell peppers. At the end, herbs and spices are added.
In the CIS countries, zucchini caviar is invented. This is a classic dish of Russian cuisine, which is loved by many people. Zucchini caviar is prepared from fried zucchini, onions, carrots and tomato paste. Caviar has a pleasant taste and aroma, and is also a source of vitamins and minerals.
There are also stuffed zucchini. Stuff zucchini can be stuffed with different fillings: meat, rice, vegetables or even cottage cheese.
Let’s prepare stuffed zucchini boats

Ingredients:
- Zucchini – 3 pcs;
- Chicken stuffing – 500 g;
- Onion – 200 g;
- Red sweet pepper – 1 pc;
- Salt – 1 tsp;
- Seasoning for meat – 1 tsp;
- Garlic – 2 pcs;
- Dill – 20 g;
- Vegetable oil – 1 tbsp.
Preparation:
Divide each zucchini lengthwise in two, remove the inner part of the vegetable. Cut the pulp finely, also cut onion and red pepper.
Put zucchini pulp, onion, pepper to the mince, add salt and seasoning for meat. Shinkle garlic and dill, add to the stuffing.
Fill zucchini with
stuffing
and vegetables. Grease a baking mold with vegetable oil, put zucchini in it. Bake stuffed zucchini at 180 degrees for 45-50 minutes.
