Many people remember about zucchini only at the end of summer, when the vegetable garden is ripe. There are people who are not very good to zucchini, but grow it every year on their plot. It
is worth changing your attitude to zucchini, because it is a useful vegetable. It improves digestion and removes toxins from the body.
Scientists have proven that zucchini smoothies increase physical activity. But, not everyone is ready to drink zucchini juice
. Therefore, we suggest making hearty zucchini rolls.
Ingredients for zucchini rolls:
- zucchini – kg;
- eggs – 6 pcs;
- flour – 5 tbsp;
- cheese – 200 g;
- mayonnaise – tbsp;
- cucumber – 2 pcs;
- sour cream – tbsp;
- garlic – 2 cloves;
- mushrooms – 2 pcs;
- salt – ½ tsp.
Preparation of zucchini rolls:
Boil a couple of hard-boiled eggs, shred zucchini on a coarse grater and leave for 5 minutes. Then squeeze zucchini from excess liquid, break 4 eggs into the vegetable mass.
Sift flour into the zucchini mixture, knead and leave to soak for a couple of minutes. Heat a little vegetable oil in a frying pan (24 cm diameter), pour the zucchini dough on the surface, spread it on the bottom.
Fry the zucchini tortillas on both sides until browned
.
Transfer the tortillas to a paper towel-lined plate and let cool slightly.
Cut peeled mushrooms into small cubes, fry in a frying pan until the liquid evaporates from the mushrooms. Salt the mushrooms, continue frying for 2-3 minutes. Grate
cheese and boiled eggs on small grating cutters. Press a garlic clove through a press to the mixture of eggs and cheese.
Put the cooled mushrooms into the
mixture of
eggs and cheese, mix. Fill the stuffing with mayonnaise, mix the products.
Cut cucumbers into small cubes, put them on the tortillas. Then put a tablespoon of stuffing in the middle of each flatbread, roll it up.
Put the rolls into a baking dish.
To prepare the sauce, chop finely your favorite greens, press the second clove of garlic, combine these ingredients with sour cream.
Cover the rolls with food film and send them to the refrigerator for a couple of hours.
Thus, a hearty dish of zucchini with an excellent sauce is obtained.
The rolls can be heated in the microwave or eaten cold.
